Drums are fine. If you need to alleviate your old mans fears, take the car to a brake shop, have the drums reshod and perhaps new wheel cylinders, and have them adjust them up correctly.
Mate if you have a nice cam, it'll get lumpier, as for sounding any better with a stock cam, I doubt it.
As far as going faster/more power, again - no.
For the effort of pulling it out and putting it in, just for a lightening job......
Dunno about lightening, but to skim her flat for a new clutch, It cost me about 60 bucks from Edwardstown Clutch and Brake Service (ECBS). I pulled it out myself though (box out the bottom).
Exactly my thoughts. Get an early model hilux, mid 80's. Would be squarer and narrower too.
Get a portable angle grinder and swing on down to a commercial vehicle wrecker and you're set....
At uni we had a water brake dyno, but I never really had the chance to look properly at the workings of it. That was a good little test bed, i'd love to take a squiz at it again some day.

Go to an automotive joint and ask for some gasket paper. it'll be a sheet of black stuff, like tough cardboard. Smear a thin layer of oil on the base mating face of the carb and place it on the paper, and you'll have the outline of the carby face to use as a stencil. Cut it with a stanley.
No love on the vacuum gear though, mines too old for emissions gear!

Last dizzy brainfade I had, I plugged all the leads on my 911 in reverse order (these german engineers are so good, they don't bother labelling the dizzy caps)

As for the carby issue, could be your accelerator pump - check valve or diaphragm perhaps, so it's leaning out when you gas it because there isnt enough fuel getting sprayed in.
Hmm, so you bought the 4k and the cam from Kangaroosa. I bought the 5K Hydraulic cam setup from him that he talks about in that thread, yet to find out how that goes!

What speedo did you use this with?
Sounds like nonsense but bigger venturis will give less performance. Venturis are designed to accelerate the airflow through the carb. The acceleration creates a pressure drop that pulls the fuel from the bowl.
Larger venturis = less pressure drop = less fuel pulled out of the bowl. You may be able to improve on it, but it may just as easily got pear shaped without a bit more diggin.
